Hi, Frankie – I’m making the Martha Stewart living recipe for New Orleans-style shrimp and rice tonight – looks great, love your minor alterations. My question: do you recall if you really needed all 8 tbsp of butter? seems like quite a lot of calories/fat (and I’m telling myself I’m dieting!)

I definitely think you can take the butter level down but I wouldn’t take it all out because it adds depth to the dish. Hope you like it!

Frankie, I saw you on WBIR-TV this morning making your Buffalo Chicken Meatballs. I enjoyed your segment and learned about this blog. What a great place with lots of timely information, delicious recipes and beautiful food pictures.
